Ingredients:
4 Russet potatoes/peeled and shredded 1/2 of a grated onion 1 teaspoon garlic powder 1 egg 1/2 teaspoon flour 1/2 cup canola oil (for frying)
Put potatoes in a paper towel and squeeze out the liquid Combine potatoes, onion, garlic powder, egg and flour/mix well Form patties
Add oil to a pan, enough to coat the bottom well (over medium heat) Put 3 patties at a time into pan, sprinkle with salt and pepper. When edges turn brown flip over and sprinkle with salt and pepper and continue cooking until other side edges turn brown. A total of about 15 minutes. ( about 7 minutes per side) You may have to add more oil for each batch, which is why it calls for 1/2 cup

I got this from a older retired gentleman on Face Book Bob , he and his wife live on a fixed income so he came up with this. I tell you he posted a photo of it and gosh it made my mouth water. I am thinking I may make these with left over mashed potatoes instead of the shredded potatoes. Will let you know how that goes!

Judy that sounds delicious. You know what else I bet would be good is to add some shredded cheddar cheese to them. It sounds similar to the way I make homemade hash browns except I take the potatoes and add salt to them and then put cheese on top.

That also sounds good Chrissy. The nice thing about a lot of recipes like this one is you can switch it up a bit and make it even better.
