Ingredients: 1 and 1/2 cup creamy peanut butter 1/2 cup softened butter 1 teaspoon vanilla 1/2 teaspoon salt 3-4 cups confectioners sugar (powdered sugar) 2 cups semi-sweet chocolate chips 2 tablespoons crisco all veg shortening Combine peanut butter, butter, salt and vanilla in a bowl. Beat with electric mixer on low until well blended. Add 2 cups of the confectioners sugar and beat on low until blended. Add more of the confectioners sugar until, when you form a small ball, it stays on a toothpick. Then shape into 1 inch balls and refrigerate. Put the chocolate chips and shortening into a bowl and microwave 30 seconds on medium. Stir and repeat until smooth (reheat as needed when dipping the balls) Insert a toothpick into the balls and dip 3/4 of it into the chocolate. Put on wax paper and remove the toothpick. You can smooth over the toothpick hole with your finger. Refrigerate until firm. Yield: 40 but of course the size you make them will give you more of them or less. They are delicious Bob...that image above is not mine...just a sample of what they look like, but mine look about the same. They are very easy to make also.
